Afternoon get- togethers with friends and neighbors in the summertime are a lot of fun, but beer and potato chips get really old after a while. Try taking it up a notch - even the men in the group will enjoy it for a change. These orange and cranberry scones are perfectly complemented by refreshing wine spritzers. The scone dough can be made up ahead of time and kept in the freezer. Make more than one batch at a time, and your friends will be impressed at how you can pull off these delicious homemade treats in just 15 minutes or so!
Orange and Cranberry Scones
- 2 cups flour
- 1/3 cup sugar
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon salt
- 8 tablespoons soft sweet cream butter
- 1/2 cup craisins
- 1 T clear orange extract
- 1/2 cup sour cream
- 1 jumbo egg
- Preheat oven to 400 degrees Fahrenheit.
- In a medium bowl, mix flour, sugar, baking powder, baking soda and salt. Add the butter into the dry ingredients. Mix with hands, dough will be dry with little balls. Toss in the craisins.
- In a small bowl, whisk together the sour cream, egg, and orange extract until smooth.
- Using a fork, stir the sour cream mixture into the flour mixture until large dough clumps form. Knead in bowl with your hands until the dough blends well.
- Place on a lightly floured surface and pat into a 7- to 8-inch circle about 3/4-inch thick. Sprinkle with sugar. Place on a wax paper-lined plate in freezer until disc is fairly stiff, but not rock hard. Cut the disc into 8 wedges, like slices of pizza. Spray the baking sheet liberally and place scones about 1 inch apart. Bake until golden, about 15 minutes. Cool for 5 minutes and serve warm or at room temperature.

- Ice
- Sour mix
- Vodka
- Champagne
Cut two lemons and two oranges into slices, or little "wheels." Put half into the bottom of a gallon-sized glass or pretty clear plastic pitcher. Fill pitcher half way full with ice cubes - not crushed ice. Swirl this around some to get the aroma of the citrus fruits going. Add four ounces of vodka, four ounces of sour mix, and a whole bottle of champagne. To serve, fill highball glasses with ice cubes, set a slice of lemon and orange in each glass, and pour the spritzer in over the fruit. Serve with a straw if desired. Make sure to have enough to make another batch. One spritzer likely won't be enough for most!
