Buffalo chicken wings were introduced back in 1964 at the family-owned Anchor Bar in Buffalo, NY. Since then their appeal has spread far and wide, with international chains such as Pizza Hut and Domino's Pizza serving them up by the millions.
Buffalo chicken wraps are a great new twist on an old favorite. You can make them as mild or as wild as you like. These tasty wraps are easy to prepare - and they're great for tailgate parties too!
What You Will Need to Make Spicy Buffalo Chicken Wraps
- 2 lb. chicken tenders, prepared according to packaging and chilled
- 1/4 c. Frank's Red Hot sauce (more or less, to taste)
- 1/4 c. melted butter
- 1/2 c. shredded mozzarella cheese
- 1/2 c. bleu cheese crumbles
- 1 c. chopped celery
- 1 c. shredded lettuce
- 1 pt. grape tomatoes, halved
Prepare the Chicken for Your Buffalo Wraps
First, for food safety purposes, fully cook your chicken tenders according to the directions on the package, then chill them to under 40 degrees Fahrenheit. Then slice the chicken tenders into 1 inch strips. Mix the Frank's Red Hot sauce and the melted butter in a large mixing bowl. Throw in the chicken tender strips and toss to coat.
Assembling Your Buffalo Chicken Wraps
In a large bowl, mix together the celery, mozzarella cheese, bleu cheese, lettuce, and tomato. Gently mix in the coated chicken strips last. Place approximately 1 cup of this finished mixture across the wrap. For extra zip, splash a little extra Red Hot on before you wrap it up.
Folding Your Wraps
First, with your index fingers, fold the sides of your wraps inward. Next, using your thumbs, fold the side toward you up and over the filling. Then, fold the sides inward again, in a more triangular motion this time. Lastly, roll the wraps over to complete. Place them seam side down on a cutting board.
Making an Attractive Wrap Platter
Line a platter with kale or leaf lettuce. Put two frill picks through each wrap and cut them diagonally. Place the wrap halves cut side out on the platter in a circular fashion. Cut your wraps into fours if you prefer an appetizer-sized snack. Garnish with plenty of celery sticks and baby carrots. Include a generous dish of blue cheese dressing for dipping.
